We are going to be at Universal during Mardi Gras this year. For those who have been in 2026, what is your favorite Mardi Gras food item?
The Mardi Gras food booths usually have great variety, but many people really enjoy the Cajun dishes like jambalaya and shrimp po boys because they feel authentic and flavorful. The desserts are also worth trying, especially beignets. It helps to check the booth menus early so you can plan and avoid long lines.
Our group liked the schnitzel and pancake thingy at the Austria booth.
ETA: looks like the pancake thingy is called Kaiserschmarrn.
The food booths have really improved over the last few years. They have built-in plumbing, refrigeration and small kitchens!
I find that VincentVision on YT does a good job of being honest about food reviews.
Personally, I find the gumbo and a couple other traditional dishes they offer to be kinda bland. The sweet treats are usually pretty good
