We are on the same page! I just asked this in the covid thread earlier today since I’m heading there soon too. Reasonable guess MIGHT be end of Feb based on how they handled it throughout the waves of last year.

I am trying to navigate the cancellation charge stuff, but hesitate to even get too excited.
I have to believe they will be gone by May… but I’ve been disappointed before.
Will you guys go no matter what?
I say by March 1st.

Last week in March. Planning to go no matter the policy, but encouraged it could change by then with cases sharply dropping now. I’d feel very confident about May. Of course there could always be another variant, and they have some peer pressure with what WDW does, but I would think at some point the parks would let it be an optional thing going forward.

How much of US/IOA could we enjoy in two days?

If we did just two days at USO/IOA, and skipped VB (gasp - I know @bebe80 ) I’d have plenty of time to also enjoy City Walk and Cabana Bay AND maybe do Discovery Cove. If we did DC, we could get Aquatica and SW admission for no more money.
Would we get to do enough of USO?

For the most part. You would need to prioritize though if you don’t have Express Pass

Do I have to pay hotel parking?
Plan is to stay on property one night for the fun of the themed hotel. Then move to rental and do four days at Universal. They are offering a promo right now of 5 days for price of 3.
I’m looking at Undercover tourist and they are offering 3 day park-to-park 3-park passes with two days free for $324.41 for adult and slightly less for 9 and under.
I had planned to buy DH an AP to save on hotel and parking. But the cost of the AP with free parking and 10% off food is $610.00. That’s $285! If we save the $26/day on parking, that still leaves $181 (I think my maths are right.)
I need two hotel rooms for one night, but would I save $90/night per room with AP?

Depends on the resort and room type, but very likely you would. Look for a day in the near future for when they are offering an AP rate and compare to the non-AP rate for the same day. That will at least give you an idea.
When I stayed at HRH, I think I saved like $1000 for two rooms over three nights, but that is a premier hotel so the savings are larger.

We would be there 5/14 x one night.
I can find some rates in late April, but it looks like the savings is $30 a night. Which would chip toward my cost… but I’d really need to make certain I was sending DH for any food orders, etc., to save the 10% on food. Starting to think I’d be happiest just getting him a regular pass.
If I really want to save money, I get him the regular pass and stay all 8 nights off property.
This is where I am so different from other liners. Other liners start with a base and add to it. I start with a base and start stripping away. Like I have already dropped from two-nights hotel to one. Now I am thinking about dropping altogether.

Just fyi, the free parking with the higher tier AP does not include hotel parking.

Based on your fact pattern, I would not get the AP. You have the potential to save a few bucks by getting it, but not guaranteed. Take the cheaper pass. AP is much more valuable for those staying at a premier resort.
