Do you have the option to buy a multi-day ticket (say 2 or 3 days) and only add park hopping to one day?

No. Park hoping is all or nothing.

Park hopping is a set price.

If you want only one day park hopping, I would price out buying the one day ticket, and then the other one or two day ticket without hopping. It might be cheaper than adding the length of stay?
