I think you can add the Universal Superstar Shuttle to your hotel stay. It might be expensive though. For a family of four, it will probably run you $150 round trip. You may have to call to ask, since the website expects you to book the room and transportation at the same time.
There are other independent car services you can book as well. If you search the forums for car service I think you will find a thread discussing trusted options.

You could look into a one day car hire from Avis.
You can pick it up from MCO and return it at Cabana Bay.
