I am staying at the Pop Century hotel and I have a breakfast reservation at Ohana at the Polynesian Hotel at 7:45 am. I was wondering what is the easiest way to get from the Pop Century to the Polynesian using Disney Transportation? Or do I need to Uber/Lyft my way there?

Depending upon what time Magic Kingdom opens, you may be able to take the bus to MK and then Monorail (resort loop) or watercraft launch from there to the Poly.
Given the time, though, I think I would lean towards a Lyft.
Yes. If you want easiest the answer is Lyft
We used Uber several times during our trip this week. Never waited more than 5 to 7 minutes for pickup after booking on the app, moved between resorts & parks in 15 minutes or less. Costs were $10 to $15 per ride. We are two adults, no littles.
