We were at Disney Springs last year supposedly in the off season and we stopped there for a drink around 7:00 and we had to park so far away it was ridiculous. All of the parking lots were showing as full so we were in some overflow parking really far away. Is this normal? Any tips if we venture there this year?

Aside from getting there earlier in the day, I can’t think of much else.
I take it you are not staying on property and able to hop a Disney bus or boat…
There is a “hidden” parking behind Cirque that is usually more empty. I’ve had very good luck with that one in the several times I’ve been there. A word of warning though: you are at one end of the springs so you will have to take a boat to get to the other (world of disney/earl of sandwich) side. The walk is ridiculously loooooooong.
