Is it pretty easy to modify an ADR down? Never done it before but I just booked for a few days in April. I’m definitely going but have a few friends up in the air. So booked for 4 but may end up being just 1 or 2
As long as one person shows up, you are fine. There is no charge.
Yes, it’s usually easy to drop people from an ADR. It’s nice if you drop them ahead of time rather than just not showing up so others who are trying to add one person can pick up an extra possibly.

If it changes the table size you might open a table for a walk up if you wait. In the end, if Disney can seat people, they will.
