Is there anyway to create a Touring Plan that covers my entire trip? Or is each day a different TP?

Each day is separate. And even within the same day, each park is separate.

It would be nice to have a type of composite list in order to plan reservations, etc.

FWIW: For general travel plans, I love the TripIt app, where I can add all of the various reservations etc and see them in a timeline.
I pay for the Pro version so I can share it all with my family and all can see the info themselves in their phone apps.
If you do like the app, they have had 50% off annual cost the last several Black Fridays.
