We are taking a trip to Disney World with our family and will be staying there during our anniversary. My parents will be traveling with us so we will have babysitters. I’m trying to surprise my wife with something special/fun for our special date. Any suggestions would be appreciated!

You could surprise your wife with a nice meal out like Cali Grill and then fireworks from the amazing view. Or you could do dinner at The Boathouse and enjoy Disney Springs.
Or what about doing a progressive dinner type of thing all around Epcot.
Or take one of the behind the scenes tours or do the sunrise breakfast safari tour for animal kingdom
You could also do the special Dining with an Imagineer meal at Hollywood Brown Derby or the Dining with an Animal Specialist one at Sanaa. I’ve only heard good things about them. They’re really hard to get reservations for though.
There are carriage rides at POR and Fort Wilderness.

V&A is the obvious (if expensive) choice for a special anniversary dinner. I’ve done that twice; once in the regular dining room and once at the Chef’s Table. If that’s out of range or unavailable, CG times to see the Fireworks is a wonderful romantic dinner. It’s hard to go wrong with any of the signatures.
For DS, personally, I was not all that impressed with the Boathouse; I found it over-priced (even by Disney standards) for what you got, and the crowded feeling and noise level were certainly not “romantic”. Morimoto’s was excellent, and Paddlefish has been getting excellent reviews. For “fun” it’s hard to beat Raglan Road - excellent food and drink and great entertainment.
Another option would be to head to the Boardwalk area, have dinner at Flying Fish or Yachtsman, and then have fun “partying” at Jellyrolls…
