We are doing one table service a day during our visit, either lunch or dinner. We’d love to go eat while people are in line for rides, and ride while people are eating - what are the best times at the different parks for this?

We had a 3 or 4 pm “lunch” at Tusker House (pre-covid) and it was my favorite TS meal time. We went into the restaurant from a hot, crowded park, managed to dodge a heavy rain, and resurfaced into a much less crowded park. Surely the rain has something to do with it, but I would schedule a big “off time” meal again.
Also, I’m not sure if it’s still true, but the restaurant was far less crowded and I didn’t feel any pressure to leave our table for the next group.

Looking at the typical waits from thrill data. This is the longest wait time period for each park:
AK: 11:30-2:00
EP: 10:30-1:00
HS: 10:30-12:30
MK 11:30-5:30 (stays about the same this whole time)
