If our flight is at 4:30pm and we have to check out of the resort at 11 am, can we stay at the pool for a couple of hours after we check out of our room before we take the Magical Express back to MCO?

Yes! You can drop your bags at Bell services and enjoy the pool (and charge to your room) until midnight!
And other than wet swimsuits (have clothes change in a carry on bag?), you can do resort airline checkin in the morning and pick up your bags at your home airport.

We just did this. We arranged from bell services for a Luggage pickup in the morning and they stored all our bags and luggage all day. Was a fantastic convenient service.

Yep. We had a late flight, and bell services stored all our bags at the AKL until our ride to the airport. Worked out great.
