Morimoto’s is excellent. Raglan Road is one of my all-time favorite restaurants in WDW. I’ve only eaten at the Boathouse once, and I have to say it was one of the more disappointing meals that I’ve had at WDW; it was very expensive - even by WDW signature standards - and I would rank the quality below any of the “Disney” signatures I’ve been to. But it may just have been an “off” night; it’s hard to judge a restaurant based on a single meal.
