We have been during the actual Festival of the Holidays. We arrived just after.
I know about the Candlelight Processional and the dining packages. Is that the only nighttime entertainment? Or are there still fireworks and dining packages for that?
There is still the nightly fireworks show and I believe the Rose & Crown and the Spice Road Table dinner packages are available for it. There are also some storytellers in the pavilions at night. Another can’t miss is Living with the Land all lit up for the holidays.

FotH is the only Epcot Festival I’ve missed. When I went near the holidays, it was right before Thanksgiving so while I’ve seen the gingerbread houses, the decorations, etc, I missed the story tellers and food booths. If I was trying to take a short trip mostly focussed on those, how many days would I need to dedicate to Epcot? Favorite food booths?
I’m planning a 1/2 day in the afternoon and then 1 full day on our last park day. Not knowing what we will want to accomplish and what we will want to maybe give a 2nd round, I was hoping this would give us plenty of time.

We usually do 2+ days (split across multiple days) at EP. It is my favorite park. How much time you need really depends on what you want to prioritize.
A minimum of 2 full days. There are so many storytellers and some have overlapping times, others are only in the morning with others only in the later afternoon and evening hours. Add in candlelight processional (which you should really reserve about 2 hours to for waiting to get in (even with a dining package) waiting for it to start, the nearly hour long show, then slowly filing out of there), food booths, rides, etc and it definitely takes time to do it all.
