Previous trips to Disney we went Sunday thru Friday, but work/school schedules look like we’ll need to go Tuesday thru Saturday this year (May 2020). How much impact will starting a trip on Tuesday have on Fast Pass selections, since people starting their trips on Sunday will have a 2 day headstart picking Fast Passes throughout the week?

I think it could be a benefit since people tend to travel Saturday to Saturday. But it also depends on when you are going. I think Christmas to New Years will be bad regardless of the days you check in since those days float.
There will always be people ahead of you in the booking queue, whether 2 days or 14 days. So I wouldn’t worry overly.
The same rules apply, plan the hard to get FPs for later in your trip. Take what you can and modify.
