I made early breakfast reservations in the parks. When I did my touring plan, it has me riding, and using FP+ at times before the park opens. Is this just a glitch? What time do the rides open at each park?

What dates? Have you checked to see if the park hours have changed?
Which park? Sometimes there are specific things that open early. For example, the servers at Garden Grill in The Land pavilion try to get early breakfast people out in time to ride Soarin’ before the rope drop horde arrives. And I know that there’s a similar line for early breakfast people to do Seven Dwarfs Mine Train.
