If you purchase a one-day ticket on the official DL website, do you have to use it on the exact day you selected? I noticed that they’re good until the end of 2023 as well. So, could I use, say a ticket I buy for a slow November weekday at $104, on a busier day, or would I have to pay the difference?

pay the difference. They have tiers. So you’ll have blackout days. And how this works with the park reservation system if you can’t upgrade your ticket over the phone which I don’t think you can. i know you can’t upgrade it to add days for example or park hopper. You have to do that in person and by then there’d be no park reservations left. So in this case, I’d suggest choosing the higher tier ticket if you’re unsure.
