This may be a silly question…We want to ride some rides more than once on the same day.
My thought is that I should just add it to my Touring Plan twice for that day. Is this the correct way? Will this throw the rest of my TP out of wack? Can I still Optimize?

Yes, that is the correct way - it will not throw the rest of your TP out of whack, and you can still Optimize. The Optimizer will figure out the best way to incorporate the multiple rides into your TP - sometimes that will be back to back, but other in other situations you may end up doing the rides at different times of the day.
